I opt for the preshaved and precut vegetables for two reasons: 1- it saves a ton of time and 2- I have found that you are able to store them for a longer period of time. I also always buy premade crab cakes for the same reason. Almost any major supermarket will sell a variety of them by the seafood department. Recipe: 25-30 minutes total

Shakshuka is one of my favorite hardy dishes. It is perfect for any meal and even better on a . cold rainy day. Simply to make and tasty this recipe will not disappoint.

Some people will use buttered bread to dip into the eggs and tomato mixture. This recipe can serve one or two people, but other recipes can serve up to six! Below I have attached a recipe that serves more people. Fire & Ice Ramen Charlotte has become my favorite place to try new restaurants. Every week there seems to be another cool spot to try, but Futo Buta stuck out to me. Opened in 2015, Futo Buta is described as a space for 'creative ramen and other unique Japanese eats'. Their chef prepares the ramen and broth in house, and any visitor will surely notice the care and passion put into each dish. This gem is close to downtown and was packed to the brim when I arrived one afternoon. Located off of the light rail and with plenty of parking around the location it is perfect for an afternoon lunch or date night. After being greeted by a friendly hostess my eye was drawn to the unique art hanging on the walls and the irresistible smell of the restaurant. With tables for smaller parties, and a bar area that has a communal feel, Futo Buta was clearly a hit to the residents of Charlotte. To start we got the Low Country Pork Belly buns. They had the perfect balance of a tangy taste from the slaw and the rich taste pork belly. This was a great started to keep us full while we perused the of the menu. A friend recommended that I try the Fire & Ice ramen, but I was torn between that and the Miso ramen (both looked so delicious). The waitress was extremely helpful and talked me into the Fire & Ice ramen bowl. While I am not a huge ramen fanatic this meal did not disappoint. Not only was the dish visually appealing but it was wildly delicious. The broth was spicy, savory, and refreshing, the salmon was cooked perfectly, and the vegetables perfectly complemented the fresh salmon. Most mornings I don't have time to make a meal like the Santa Fe Rice. But, my mom always told me that breakfast was the most important meal of the day, so I always try and get a little something in.

While this may be a simple breakfast I always find myself satisfied with the results! Soul Gastrolounge, known as 'Soul' to those that frequent the restaurant, is located on Central Avenue in Charlotte, NC.
Known for their mouth watering tapas, sushi, and cocktails Soul never ceases to disappoint. Open 7 days a week the funky restaurant is always bustling with activity. Whether you want a filling bowl of ramen, fresh hand rolled sushi, or delectable pork belly tacos Soul has something on the menu for anyone. The restaurant frequently changes their specials menu, keeping visitors on their toes. I visit Soul Gastrolounge any chance I get. While I always try to get new things there are two items on the menu that I will order every time: the pork belly tacos and the tuna tacos. These two items are always fresh and never cease to amaze my taste buds. After that I usually go for a sushi roll. Their fish is always fresh and the flavors in the rolls are beyond creative and surprising. To keep things a little different I like to order whatever 'special roll' is being featured at the time (see the second picture in the slide show for reference). I started doing this after one waiter told me he has never had a special roll he didn't like... and boy was he right. Soul's fabulous food and fun atmosphere has not gone unnoticed. With over 10K followers on Instagram and numerous awards it is clear that the restaurant speaks to their audience. For me there is nothing better than homemade pancakes on a Saturday morning.
While you can make a homemade pancake mix, or pick any store brand, my favorite brand is the Krusteaz Pancake Mix. All you need to add to the mix is water and the pancakes always come out fluffy and light (link is attached below). What you'll need:

Final Touches: Once the Salmon is cooked let it sit for 5 minutes to cool slightly. For my salad I wanted to add some fresh guacamole I had bought that day and some extra pineapple salsa to give the salad a lighter taste. Once the fish had cooled placed it on top of my brussels sprout salad and added a drop of guacamole and salsa as the finishing touch! For the salad add anything you want!! I love adding different vegetables to my salads so I never get bored of the same thing! I have never been big into 'meal prepping'. However, I hate to waste food. One way I have been able to keep food waste to a minimum is to use my leftover starches from dinner to create a filling and delicious breakfast the next morning.
